Stuffed Sweet Pepper "Carrots"

So you've been asked to bring an appetizer to Easter dinner and now you're panicking because you don't know how to make anything? I've got you baby! These cheese stuffed peppers are not only extremely easy, they're also festive and adorable!! Hello, triple threat!!
Prep Time 15 Minutes Serves 10+
You'll need:
Dairy
- 150g Boursin cheese (get larger if you have larger peppers)
Produce
- Mini sweet peppers (look for a pkg with as many orange as possible, yellow will also do)
- Fresh dill OR oregano OR any leafy green herb
Let's Cook:
- Cut peppers in half, vertically
- Carefully cut out the insides
- Fill with Boursin cheese
- Stick herbs in the top to look like a carrot top
